Texas Prisons Texas Department of Criminal Justice http://www.tdcj.state.tx.us/ We have been in touch with the Office of Chaplaincy Operations and received the following written guidelines: In Texas, Food Service offers three diet trays,  regular, meat free and pork free.  The offenders choose which type of tray the want as they go through the serving line. The offenders that are not able to go through the general serving line and are fed in cell have to make a request for the tray they want through the security building Captain.  These are not considered religious trays.  The offenders are allowed to request any tray they want, but cannot change their request for 6 months.
