In November 2008 we spoke with the Food Service staff who supervise the special diets and they were very helpful.
These are the rules unless you are in a high security/SHU unit.
- You have a vegetarian option at each meal. You just have to ask for the “sub” or “meat substitute.” You have to do this at every meal and you do not need any special permission.
The only reason an inmate needs special permission is if either of these is true:
- You are in a high security/SHU unit (in which case you need special permission)
OR
- You are requesting a vegan diet (meaning no meat, no eggs, no milk, no dairy). The vegan diet is only for members of particular religions and is not open to Christians.

Please note, however, that the regulations seem to have been updated. As of November 2008, when we talked with staff, we were told that most inmates now have the options at each meal of requesting a meat substitute. Generally, special permission is not required.
