The website for the Delaware Department of Correction states:

"Religiously mandated diets are accommodated through the provision of alternative meals. For example, Muslim inmates unable to eat pork will be offered an alternate dietary choice. Additionally, a Rabbi blesses all meals offered to inmates who are Orthodox Jews. Inmates may also purchase foods from the commissary to supplement their diet. All meals meet recommended daily dietary requirements as directed by the USDA." (http://doc.delaware.gov/information/ReligiousServices.shtml)
It appears that the Delaware Department of Corrections provides special diets for some religions: Muslim and Jewish inmates are able to get religious diets through the chaplains' office. There does not seem to be vegetarian or vegan options. We wrote for clarification and were told (November 2009) that the only religious diets available are kosher and halal.
